So, I have started looking for recipes that have lots of redeeming nutritional values (i.e. multiple items on the "really good for growing baby" list of foods) to begin preparing. Paul and I have been meal planning every week with this in mind, and I am just starting to branch out into exploring some baked goods options that meet this criteria.
NOTE: If you have any baked goods recipes that are healthy, lower calorie, contain really good for you ingredients, etc... PLEASE SHARE! I miss baking. A lot. It is my number 1 stress reliever!
Anywho, Paul also likes baked goods, so, I went on a search for something to make, and came up with this one...
Oatmeal Blueberry Muffins
INGREDIENTS1 1/4 cups quick cooking oats
1 cup all-purpose flour
1/3 cup white sugar
1 tbls. baking powder
1/2 teaspoon salt
1 cup milk
1 egg
1/4 cup vegetable oil
1 tsp. vanilla
1 cup (or more) blueberries, rinsed and drained
Makes 12 muffins
WHAT TO DO
Preheat oven to 425 degrees
Mix together oats, flour, sugar, baking powder, and salt.
Stir in milk, egg, oil and vanilla until all ingredients are combined.
Gently fold in blueberries.
Fill greased muffin cups 2/3 full.
Bake for 20-25 minutes.
Enjoy!
These muffins are hearty because of the oats. Have antioxidants because of the blueberries. And, have about 150 calories per muffin. YAY!

I commend you for sticking to the healthy eating - but let yourself bake once in a while! Trust me - from one baker to another - you'll have less time and energy to do so once baby actually arrives!
